Happy New Year!

Hey there foodies and happy New Year! Can you believe we are already in the year 2020. I swear life goes by so fast and I don’t know about you guys but 2019 felt more like 3 months opposed to 12. Last year was a big transition for me. I had great things happen and some not so great things but in all, I appreciated every moment.

Normally, I like to be the girl that says “I don’t do New Year resolutions” but lets be honest here, there is something extremely gratifying about looking out into a fresh start and setting goals. If life can change in a second, imagine what you can do if you have a whole year! Some of my goals for 2020 include, pay down debt, as I want to look into buying a home in 2021. I want to travel to at least one state I have never been before, Obtain a passport (so that state traveling can transition into international traveling) and of course I have a blogging goal this year!

Now, I have never actually given myself a blogging goal before, not for the year at least. I usually go with the flow but then life always seems to get in the way and I realize that I have not blogged in weeks…okay, months. One of my life goals is to actually become a professional blogger, so I think going with the flow is not going to get me very far. To be realistic, I know I can’t stop life from happening and I definitely can’t snap my fingers and all of a sudden rid myself of all procrastination. So I am going to take it a big slow and give myself an overall goal, rather than a weekly or monthly goal.

In the year 2020 I would like to have written and posted 100 blog post! This one being post #1. I have been feeling very creative lately and being in culinary school is really challenging me to expand my “art” and create new recipes, so I think I can put together 100 of them within a year. I am really excited to move forward in my life, with my blog and with whatever 2020 has in store for me.

So what are your goals for the year? If you haven’t given it much thought, I challenge you to come up with at least one goal that will help you move a step forward in life. Again, happy New Year to all, be safe and happy eating!

Updates & Great News!

Hello foodies! I know some of you are probably thinking “girl, where have you been!?” I know I know, I have not blogged in so long. At first, I wasn’t blogging because I was sick for awhile but then life took a sharp right turn and I became busy adjusting to it. One of my biggest updates, as you can see in the picture above, I AM IN CULINARY SCHOOL! I wrote a post some months back, mentioning that I was considering it but I was unsure when I should. One thing I’ve learned in life is there is no such thing as the right time, do it now! And so I did. It was a long process getting prepared for school and I just started on the 11th of this month. It is such an amazing feeling, learning about the thing you love. So far we have been learning a lot about different cuts and knife skills. I never thought I had good knife skills but I have impressed myself and I can’t wait to grown, learn and become a professional in the kitchen.

Aside from school, I have also started a new job! It’s a work from home, data entry position and it is perfect for work-life balance. If you never worked from home before, it was the best experience! A 15 minute break means so much more, when you’re in your own comfort zone, then it does when in an office. So far so good on the new job!

I also had the opportunity to cater my first event a few weeks back! I won’t go into a lot of detail about that here, as I want to make a separate post about it. I will say however, that it was the most exciting/stressful/amazing experience I have had in awhile and I really hope to have more opportunities to cater!

Here is a sneak peek at the cookies I baked & gift bagged individually for the event. They were a huge hit!

As far as being sick, I am okay. I am still trying to find a balance to keep my health on track but I am alive and happy! These past few months have been so stressful but great at the same time. I think I am in a space now where I can get back to blogging, which I am excited for because I’ve missed it.

The Unhealthy Vegetarian

Reading the title, you are probably thinking ‘what does that even mean?’ Most of the time when someone says they are vegetarian or vegan you imagine them sleeping on a bed a lettuce and eating avocado toast everyday but of course it is more complex then that. There is an unhealthy side to vegetarianism and no it has nothing to do with protein deficiency.

I often reflex over my long, now 8 year journey of being a vegetarian and I can’t help but laugh at some of the ups and downs I have faced. I jumped head first into vegetarianism and though I did I little research before hand, I still had no idea what I was doing. Naturally, I made a lot of mistakes a long the way. So if the unhealthy vegetarian world needed a poster child, I am free on Tuesdays. I felt inspired this morning to write a blog post going over this topic in hopes that it helps someone while they piece together their vegetarian journey or maybe just their journey with gaining a better relationship with food, vegetarian or not.

Full Disclosure: Never forget that life is short and everything I mention are things to CAN do just things you should not do on a regular basis. Eat the cook but also have a salad 🙂

Carb Overload

When I first became a vegetarian I was hungry ALL THE TIME! It felt like no matter what I ate it was not enough and I basically replaced meat with carbs. It was bad you guys, I would eat potato sandwiches (insert shameful faced emoji). As a result, I gained almost 100 lbs in a little under a year. Carbohydrates are not bad, despite what diets try to tell you. In fact, in high school, before our ROTC Physical Training competitions they would tell us to eat a high carb dinner the night before because you body needs the glucose you get from carbs for energy. Just don’t over do it and if you find yourself hungry all the time, load up on protein instead!

Not Actually Eating Vegetables

I am not 100% guilty of this one because I am always loved my vegetables but as crazy as this one sounds I have met vegetarians who don’t eat many vegetables. These vegetarians are the ‘As long as there is no meat it’s vegetarian’ kind of people. Which….yeah, they technically are not wrong, however, it’s not the healthiest way to go about things. If you scan over your week and you had pizza, fries, pizza again, fries, veggie burger with fries and the left over pizza from night one. You might want to reevaluate your eating habits a bit. I will admit, I am a sucker for pizza, so I have to watch myself on that one. Vegetables are amazing, eat them!!!

Veggie Chicken,Veggie Burgers, Veggie Turkey, Veggie Ham……ect…

Yesterday I wrote a blog post talking about my favorite meat alternative brands click here to check it out! In the post I mentioned that though these products are amazing, they are processed foods and I would not recommend making them the primary source of your diet. They are healthier and you could be eating a lot worse but some of these products are high in sodium and you really want to be mindful of how much you eat. It’s easy to pick up a pack of veggie burgers but you can also pick up chickpeas or black beans and make a homemade veggie burger at home. Not processed, not full of salt and other artificial fillers and even healthier. With that being said, I still love meat alternative products, I still eat them, I get excited when something new comes out. It’s all about balance.

Really Only Eating Leaves

Lastly, I want to talk about not eating enough. I am guilty of overthinking about what I should be eating as a vegetarian. I have had more moments than I would like to admit, were I was eating pretty much nothing and starving my body. Not eating or not eating enough is just as bad, if not worse than over eating or eating the wrong things. Don’t eat lettuce, cucumber salads every day all day because you body will break down at some point. The world jokes about vegetarians eating only leaves but of course it is not true. Explore food, there are so many options out there and I encourage you to try them all!

At the end of the day it is all about balance! Finding the right balance for you is hard. I am still trying to find my balance and I have been in this for years now. But every year brings growth and new understanding of myself, my relationship with food and my balance.
